Mini Cheesecakes Recipe


This holiday season I decided to try a new recipe for a family party. I think for my first attempt at cheesecake I did a pretty awesome job. Also these babies were quickly snatched up and hidden in the refrigerator by my grandmother because after tasting one she was no longer in a sharing mood!

2 Eggs
1tsp of Vanilla Extract
2 8oz Packages of Cream Cheese
1/2 Cup of Sugar
2 Cups of Graham Cracker Crumbs
3/4 Stick of Melted Butter
1 Can of Cherry Pie Filling

1. Preheat oven to 350 degrees Fahrenheit
2. Mix first four ingredients until smooth
3. In another bowl mix graham cracker crumbs and melted butter
4. Spoon a Tbs of the crumb mixture into each greased or lined cupcake pan
5. Fill each cup 2/3 of the way with cheesecake mixture
6. Bake for 15 minutes
7. Let cheesecakes cool
8. Top each one with cherry pie filling
9. Refrigerate
